tasty corn








Last week, we entered a BBQ side dish contest at work and ended up winning second place with our Mexican Corn inspired 
summer salad.  It's the perfect summer dish and we wanted to share it with you!


you will need:

4-5 ears of corn
1 package of Cojita cheese
2 green peppers
 1/4 c. fresh cilantro
3 tbs. butter
1/3 light mayo
Cayenne pepper
2 limes
salt

how to:

First, cut the corn vertically to remove the kernels. Next, melt the butter over medium
heat in a skillet. Once melted, reduce heat and put the corn kernels into the
melted butter and cover. Cook for about 3-5 minutes, or until the corn
kernels are just slightly tender. You can cook them longer if you'd like,
but we like the extra crunch in our salad. Dice the green peppers and add the corn and peppers into a large bowl.

Next, mix the mayo into the bowl until mixture is well coated.
 Squeeze the limes over mixture and stir.
Add the cojita cheese by crumbling over your corn mix.
 Continue to stir until it is combined.  Lastly, sprinkle chopped cilantro
and mix into the salad. Use the salt and cayenne pepper to taste.
