banana bread pudding





From time to time {and by time to time we mean regularly},
we tend to overbuy on food.We are constantly tossing old items out.
After some thought, we decided to think of some less wasteful alternatives
to make ourselves feel a little less guilty about it.  As it happened, we had
a rather large amount of bread that was not 
too far away from being "past its' prime". Having a bit of a sweet tooth lately,
we decided to put those carbs to good use and make our 
own rendition of a classic favorite,  bread pudding.



you will need:

2 c. granulated sugar
2 c. of almond milk (you can use 2%)
2-3 c. of cubed bread
2 bananas
1/2 c. of brown sugar
3 large eggs
2 large egg whites
1 tbs vanilla extract
1 c. of cinnamon chips (optional)
large baking dish

how to make:

Preheat the oven to 350 degrees. Spray the large baking dish with cooking spray.
 Dice the bread into small cubes.
Some recipes suggest letting the bread sit overnight to stale, ours was already
a bit stale so skipped this step. Layer the bottom of the dish with the diced bread.
Then, add the sliced 
bananas, brown sugar and cinnamon chips and distribute evenly
over the bread cubes.

 Combine eggs, egg whites, sugar
vanilla extract and milk into a large bowl. Mix together
for about two minutes, or until blended. Pour the mixture evenly
over the bread cubes.Try and make sure you 
cover most, if not all, of the bread cubes.

Place the baking dish into the oven and bake for about 30-40
minutes. When done, remove from the oven and let sit for about
five minutes and serve. 

Voila! We like to eat ours with a scoop of ice cream!

the single "A Sky Full of Stars" ever since its early release.
To no surprise, the album did not disappoint; we are equally entranced by the rest of the
