Fruity Pebble Ice Cream Sandwiches

We have been trying to come with {sweet} ways to beat this late summer heat and we have a recipe that combines three of our favorite things: cereal, cookies and frozen custard! We used sugar cookies and the best frozen custard around from the world famous Ted Drewes! After we scooped one small scoop of strawberry frozen custard onto the cookie, and rolled the sandwich in a bowl of fruity pebbles. After the cookies were baked and cooled, this process only took 5 minutes and can make up to 12 ice cream sandwiches!
