January is the month of Resolutions,
and also the month of breaking resolutions
in the name of Super Bowl Parties.
Luckily it's only one day, but
we love to indulge in the countless
appetizers and dips, and whatever other
delights make their way to the party.
We also find this as a good opportunity
to experiment a little bit in the kitchen.
This week, we stepped in the kitchen to
recreate a childhood favorite;
PIZZA ROLLS!
You will
need:
1 package of
square wontons
Pizza sauce (we made our own. Recipe below)
Mozerella
Peperoni
Olive Oil
For the
Pizza Sauce*
1 Container
of baby tomatoes
Olive Oil
½ Tbs. Red
Pepper Flakes
½ Tbs. Paprika
1 Tbs. Italian
Seasoning
1 Tbs. Minced
Garlic
*Side note:
I tend to sort of measure and taste,
so these measurements are an estimate of
the amounts
I actually used, but I have made this recipe three
times, and it has
turned out AMAZING every time.
Coat the
bottom of your sauce pan with olive oil and
turn on Medium heat. Add all of our
seasonings.
Stir them into the oil. Then add your tomatoes.
Cover your pan with
a lid and simmer tomatoes
for about 7-10 minutes, or until your tomatoes are
soft,
or can press down with a fork.
(see picture below. Tomatoes will wilt)
Pour contents
into a mixing bowl, to blend with
an immersion blender, or into a food
processor/blender.
Blend the mixture
until the consistency resembles that of a sauce.
Pizza Roll
Mixture
1 block of mozzarella
1 link of peperoni
Pizza Sauce
Preheat the
oven 425 Degrees
Mince up
your cheese and peperoni into tiny cubes.
Then add your *cooled* down pizza
sauce to the mix.
You do not want to add hot pizza sauce to
the mix to prematurely
melt your cheese.
Lay your wontons onto your baking sheet lined
with parchment paper. Taking a spoon, place a small
amount in the middle of each wonton. You do not
want to put too much in the middle so the wontons
do not overflow while backing. Then, taking some
water, line the edges of the the wont, and fold it over,
pressing the sides of the wonton to seal. Repeat this until
your baking sheet is full. Taking a basting brush, dust a
small amount of olive oil onto each pizza roll.
Bake in the oven for 10-14 minutes, or until golden.
You make also broil them for a little bit after baking for a little crunch.
