Eggs + Lox Benedict



I think we can all agree, Brunch
is the best time of the weekend.
St. Louis is filled with AMAZING
brunch spots, but some weekends,
it's kind of nice to 
have brunch at home.

One of our absolute favorite go-to
brunch meals is Eggs Benedict.
Eggs Benedict gets a bad wrap 
for being "difficult" to make at home.
You have to poach eggs, which 
can sound like a daunting task,
make your own hollandaise, 
it's a process. Luckily, we've mastered
the art of an EASY recipe that you
can make at home in ten minutes time,
and with a little twist non-the less!
We decided to make ours with Lox instead
of the traditional Canadian bacon.
We also found these AMAZING pouches
 called Pouchies at Crate and Barrel
that make poaching eggs ridiculously
easy.

you will need:

1/2 dozen eggs
• You will need 3 egg yolks and
2 regular eggs
English Muffin
1 pkg of lox (cured salmon)
1/4 tbsp. Cayenne pepper
1.5 tsp salt
dash pepper
1 stick of butter
1 tbs lemon juice
Poachies (if you do not know how to poach eggs)
Immersion Blender


To start:

1. Fill a small sauce pan with water
and turn on medium/high heat. You will
want your water at a rolling boil when you
are ready to poach your eggs.

2. Take your stick of butter and melt it
in a saucepan on medium to low heat.
You don't not want to "over heat" the 
butter.

3. While the water is boiling and butter is melting
start making your hollaindaise sauce. Take your
egg yolks, cayenne pepper, lemon juice and salt and put
them into a container. You will want a container
that your Immersion Blender head will
submerge into your mixture.

4. Turn on the immersion blender and blend contents 
for one minute



 5. By now your water should be at a boil. Reduce
Heat to create a rolling boil. Then follow instructions
On your Pouchies to begin poaching your eggs.

6. Then take your melted butter and bring it over
To your egg mixture. While immersion blender is on,
Pour the melted butter into your egg mixture.

7. Blend for about 30 seconds to mix.
  


8. Split open your English muffin and top with
Your lox. By this time the eggs should be done
Or close to done. Take poached egg and put on
Top of the lox.

9. Pour your hollandaise over the benedcits.
